Cairo rewards travellers who slow down. The Giza plateau and the Grand Egyptian Museum are the headline acts, but the city's real character lives in Islamic Cairo's alleyways, in Coptic churches built over Roman fortifications, and in Khan El Khalili at dusk when the coffee houses fill up.
